Welcome to the San Chez Bistro Totally Tapas Cooking Exhibition And Reserve Wine Dinner Tuesday, August 12, 2008 at the San Chez Café

 

This evening you will be experiencing the preparation and ingredients of eight of our signature tapas, and three magnificent postre. These will be paired with specially selected wines from our reserve list to enhance the flavors and enjoyment of these tapas. As we go through the recipes and wines we will explain the techniques of preparation, the acquisition of these specialty ingredients, and how the wines compliment the tapas. Please feel free to ask questions of the Chef and Sommelier. This is your opportunity to learn the secrets of those incredible tapas flavors in this intimate, behind the scenes glimpse into the world of San Chez Bistro.

MENU

 

Course 1

Plato de Jamón y Queso | Traditional Spanish serrano ham, sausages, imported cheeses, dried fruits, and Marcona almonds

Queso Relleno| Fresh mozzarella stuffed with Serrano ham, spinach and roasted red peppers on

grilled bread with sun-dried tomato pesto>

Wine Pairing:  La Gitana Manzanilla – This is a unique wine style can be made in only one place in the world;

Sanlucar de Barrameda in Jerez, Spain.  This is actually a sherry with no oxidation due to the unique climate and flor.

Very delicate, soft, with a balance of fruit unique to this style of sherry.

 

Course 2

Corazones de Palmera | Hearts of palm salad with organic greens, fresh tomatoes, tomato vinaigrette

and an avocado and leek cream>

Atún en Escabeche | Herbed seared raw tuna*, marinated carrot & leek ribbons, spicy mango purée, and salsa verde.

Wine Pairing:  Lo Tengo Torrontés - This wine has intense aromas of roses and peonies, and is off dry, with citrusy

and white peach flavors, good depth, and a rich texture. Aged in stainless steel, it shows no oak. Coming from the

largest wine producing region of Argentina, Mendoza some consider to be the new “Napa Valley” of South America.

 

 

Course 3

Gambas Asadas al Fuego | Spicy Moroccan fire-roasted shrimp with white rice in a sweet banana mustard cream

Esparragos en Salsa Romesco | Fresh roasted asparagus laced with a romesco sauce of sweet red pepper,

almonds and garlic, topped with Marcona almonds and lemon

Wine Pairing:  Bodegas Bretón Lorinon Reserva - As you swirl the glass you're greeted with a burst of fresh bright

cherry aromas followed by raspberry and whiffs of vanilla, all of which are echoed on the palate. Elegant and balanced

with a sensible amount of alcohol (12.5 percent), it is a perfect summer red and as versatile as a good pinot noir.

 

Course 4

Arroz con Pollo | Alioli saffron rice casserole with grilled chicken tenderloins, chorizo sausage, tomato, pimientos, onion, and peas

Pan a la Plancha con Tomate | Grilled baguette bread rubbed with fresh ripe tomato, roasted garlic and olive oil

Wine Pairing:  Burgan’s Albariño - This unique style of wine is only being made in sub-region of Galicia called Rías Baixas D.O.

Wines from this region are renown for their high levels of malic acid resulting in intense citrus notes in combination

with a distinct minerality found prominently in the Galicia region.

 

Postre Course 5

Crema Catalana | Baked sugar glazed custard laced with hazelnut liqueur

Torta de Chocolate al Whisky | Layers of whiskey soaked chocolate and vanilla cakes, caramel pecan whiskey ice cream, white chocolate mousse and raspberry glaze.

Helados y Sorbetes | Seasonal selection of Palazzolos’ handmade sorbets or gelatos

Pairing Flight:

Port: Sandemans Founders Reserve – Named in honor of the Founder, this Reserve is one

of Sandeman’s greatest Portos. Selected from the finest “lots” of each vintage and aged for

5 years. Full of the power, fruit and fire that distinguishes classic Porto.  Intense ruby red color,

brilliant and clean. Rich red fruit aromas characteristic of young classic Porto balanced with the finesse of age.

Dessert Wine: Casta Diva - A Spanish dessert wine that is Muscat based.  Deep orange-gold.

Highly perfumed aromas of orange liqueur, botanical herbs, juniper, clove, ginger and licorice.

Firm acids give energy to the complex flavors of mandarin orange, peach, apricot and exotic herbs.

A dense, structured, fascinating sweet wine with a very long and vibrant finish.

Sherry:  Emilio Lustau Rare Cream - Mahogany color; concentrated aromas of smoky, dried fruits; the

ultimate cream sherry, luscious and smooth, rich, complex and very long on the palate with a

balance of clean acidity at the finish.  This is a great dessert wine. Drink also as a digéstif at the end of a meal.

 

Grilled Asparagus and Romesco Recipe
